How thick can a schnitzel be?

High-performance portioning system. With the GMS 1600 twincut, TVI is presenting a universal high-performance portioning system for industrial meat processing via Multivac, which aims to score with maximum portioning quality, yield and flexibility.

The GMS 1600 twincut is suitable for portioning frozen meat as well as fresh meat in cubes and slices of various thicknesses. The processing spectrum ranges from pork fillet to beef topside and from carpaccio slices with a thickness of one millimeter to roasts with a thickness of 300 millimeters. Even meat with bones such as pork loin or chops can be easily cut into even slices. The maximum product length is 650 millimetres.

Thanks to TVI's patented 3D forming system, the multifunctional portioner offers flexibility and precision. Thanks to many standard modules and customer-specific programs, the GMS 1600 twincut can solve practically any portioning task. Short changeover times increase availability and therefore productivity. The dual-lane cutting channel and the option of simultaneous reloading during the portioning process ensure maximum throughput. With minimal give-away, the highly efficient machine can portion roast beef in 200 gram portions, pork loin steak weighing 80 grams or goulash with a thickness of 30 millimetres.

Equipped with new control technology, the GMS 1600 twincut can be automated and offers precise compartment and individual slice depositing. The total length of this flexible meat processing system, including the outfeed conveyor for sorting meat trimmings and B-goods, is 5.2 meters. The solution can be combined with a continuous freezer and an automatic insertion module, for example, and connected to a high-performance thermoforming packaging machine or a Multivac traysealer.

TVI develops and produces around 180 machines per year at its Irschenberg site. TVI's customers portion steaks, schnitzels, roulades, chops and grill torches, for example, for the entire retail and catering sectors. TVI supplies both individual components and complete production lines, from freezing for the correct tempering of meat to portioning machines and automatic insertion of the finished portion into packaging. pb
